Reason #1: Roasted to Order
All our coffee is roasted to order. What does that mean? It means you receive your coffee within days of roasting. Coffee flavor fades over time; so why get coffee that got roasted who knows when, when you can get coffee roasted this week?

Reason #2: Roasted with Hot Air
Most coffee is roasted in a drum roaster, but not ours. In a drum roaster, the coffee tumbles in its own smoke, but in ours it is roasted with hot air, and the smoke is constantly being removed. So why does that matter? When roasting with hot air, you taste the actual unique flavors of the coffee rather than the roasting process.
Humble beginnings are an understatement when you look at where we began. Using an airpop popcorn popper we roasted our first bag of coffee in a garage in 2011. It was awful. After some much needed R&D, we learned how to actually roast coffee (DeNovo was born). Realizing if we wanted to roast more than two ounces of coffee at a time, we converted a gas grill into a coffee roaster. Outside of nearly setting the garage on fire, this worked great! Finally in 2015, we made the jump to a commercial grade roaster and moved into a dedicated roastery (fancy name for a place where you roast coffee), and we haven't looked back.
We have set off our fair share of smoke detectors, dumped half roasted beans all over the floor (Three Minute was born) and made countless undrinkable blends, but what can we say? We have loved every minute of it, and we hope you do too!
